  • 1 kg chicken with bones
  • 1 1/2 tsp salt or to taste
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp kashmiri red chilli powder
  • 1 tsp cumin powder
  • 1/4 tsp red food colour {optional}
  • 4 -5 green chillies crushed
  • 1 1/2 tbsp ginger garlic paste
  • 2 tsp any good quality biryani masala {keep 1/2 tsp aside}
  • 200 grams whisked curd
  • 1 fist coriander and mint leaves each
  • 4-5 green chillies whole or according to your spice
  • 200 ml oil
  • 2 tbsp whole spices
  • 4 large sliced onions
  • 1 kg basmati rice
  • 1 tbsp whole spices
  • 3 tsp salt
  • 1/2 tsp lemon juice
  • 2 tbsp coriander and mint leaves each
  • 2 tsp clarified butter {ghee}
  • 1 tbsp kewra water + pinch of red food color

Instructions
 

  • Marination For Chicken Biryani Recipe:-
    Firstly wash the chicken thoroughly and marinate it with salt, turmeric, coriander powder, red chilli, Kashmiri red chilli powder, cumin powder, red food colour {optional}, crushed green chillies, biryani masala, ginger garlic paste, whisked curd, coriander and mint leaves and whole green chillies. marinate with all these ingredients and keep for 30 mins minimum or 2 hrs max.

  • Preparations To Do Before Making Chicken Biryani Recipe:-
    Soak Basmati rice in water for 30min.
    Boil 1 litre of water with salt, whole spices, lemon juice, little oil, coriander, and mint. After the water starts boiling add that soaked basmati rice and cook till 80% done strain the rice from the water and keep it aside. {Keep 1 glass of rice water aside for later use}.

  • Method For Making Chicken Biryani Recipe:-
    STEP 1 OF MAKING CHICKEN BIRYANI MASALA:-
    Heat oil in a vessel and add the whole spices mentioned above the onions in the ingredients section. Let it splatter then add the sliced onions and cook till golden brown. After that remove 1/4 cup of onion from the vessel and keep aside add the marinated chicken to that vessel and add 1/4 cup of water in that marination bowl clean all the masala and add that masala water in that chicken mix well close the lid and cook the chicken for 12 to 15 mins until the chicken is tender.

  • STEP 2 Layering Of Chicken Biryani Recipe:-
    After the chicken is completely cooked add that boiled rice above the chicken masala spread it over nicely then Sprinkle the fried sliced onions which we have stored earlier and above that sprinkle the leftover biryani masala which we have stored then add kewra and color water mixture all over the rice that spread coriander and mint leaves than drizzle clarified butter. Then incorporate the leftover stock that was carefully preserved earlier, enhancing the richness and depth of flavor in the dish. Cover the vessel with foil wrap or some new paper and close the lid over it on another stove heat an iron tawa for 5 mins keep the biryani vessel on it for 5 mins on a high flame then lower the flame and cook for 15 mins on dum(simmer on low flame).
