- 6 to 7 Cloves
- 5 to 6 Green cardamom crushed
- 2 Black cardamoms crushed
- 6 tsp Kashmiri red chilli powder
- 3/4 tsp Saunth powder (Dry Ginger Powder)
- 4 tsp Saunf powder (Fennel Seeds Powder)
- 1 tsp Garam masala powder
- 1/4 tsp green cardamom powder (Elaichi)
- 200 ml Curd/plain yogurt whisked
- 2 tsp Salt or as per taste
- 6 tbsp Mustard Oil
- 2-3 Ratan Jot Sticks (optional)
- 2-3 tbsp ghee
Instructions
- Pre-Preparation For Making Mutton Rogan Josh:-Wash &drain the meat.Whisk the curd/plain yogurt.Crushed the whole spices and keep aside .
- Method For Making Mutton Rogan Josh:- Heat mustard oil in a pan till the smoking point. Once the oil heats up and becomes smoke switch off the flame and let it cool.
- Again heat the oil and then add the cloves and cumin seeds. Also, add the asafoetida. Give it a mix for 15 to 30 seconds and then add the mutton or lamb pieces. Mix well and stir (bhunna hai) on high flame for 1 minute and then add the crushed green and black cardamom. Give it a good mix and then continue to fry on medium heat for 4-5 minutes till the meat is brown in color. Now add the salt and Kashmiri red chilli powder and mix it well. Cook on low flame for 3 minutes for the meat pieces to absorb the color.
- Now add the dry ginger powder & fennel seeds powder, mix, and fry it on low to medium flame for 3 mins till the oil separates.
- Add the whiskey curd/plain yogurt on low heat.Keep stirring and cooking on low heat for 2- 3 minutes till the oil separates. Add the garam masala powder, give it a mix, and cook for 2 minutes. Now add 450ml water and allow it to come to a boil.Reduce heat to low and cook covered on low heat for 45-60 mins till meat is tender.Open The lid and stir in between. Once done, add the Green cardamom powder, give a mix, and simmer for 2-3 mins.
- Meanwhile add ghee in a separate vessel and melt it
